Coconut Blueberry Chia Pudding

This fruit-filled dessert combines the latest in nutrition science with principles from the ancient art of Ayurveda. The chia seeds, loaded with antioxidants, are a great source of omega-3 fats, while the coconut milk supplies a half-dozen nutrients. The blueberries are superfruits with super flavor.

Ingredients

  • 1 cup coconut milk
  • ¼ cup chia seeds
  • ¼ tsp vanilla extract
  • ¼ cup blueberries
  • Stevia or coconut sugar to taste (optional)

Instructions

  1. Blend the coconut milk, vanilla extract and stevia or coconut sugar.
  2. Mix in the chia seeds.
  3. Pour into a jar and let it sit for at least two hours till it thickens into a gel.
  4. Top with blueberries.
