Healthy Cranberry Bliss Bites

Try this healthier spin on a favorite winter dessert.

These healthier cranberry bliss bar-inspired bites are lower in refined sugar, use healthier fats, and offer some fiber from almond and coconut flour. Enjoy this guilt-free treat!

Ingredients

Healthy Cranberry Bliss Bites

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup dried cranberries, unsweetened or lightly sweetened
  • 2 ounces of dark chocolate or ¼ cup dark chocolate chips

For the Glaze

  • 2 tablespoons Greek yogurt
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon lemon juice

Instructions

  1. Preheat and prepare: Preheat your oven to 350°F. Line an 8” x 8” baking pan with parchment paper.
  2. Mix dry ingredients: In a bowl, mix almond flour, coconut flour, baking soda, and salt.
  3. Combine wet ingredients: In another bowl, whisk honey or maple syrup, melted coconut oil, egg, and vanilla extract.
  4. Combine wet and dry mixtures: Combine the wet and dry mixtures and stir until well combined. Fold in the dried cranberries and dark chocolate.
  5. Form dough and bake: Press dough into the 8” x 8” baking pan. Bake for 10-12 minutes or until lightly golden around the edges. Please note: baking times may vary
  6. Prepare glaze: While the bars are baking, prepare the glaze by mixing Greek yogurt, honey or maple syrup, lemon zest, and lemon juice.
  7. Cool and glaze: Allow the bars to cool completely. Once cooled, drizzle the glaze over the top.
  8. Slice and serve: Cut into bars or bite-sized pieces and serve. (They will cut more easily if placed in fridge till cold.)
