Herby Watermelon Salad

Try this refreshing salad for an easy, light and nutritious snack.

Integrative nutritionist Trisha Cornell combines seasonal classics to create a flavor bomb for summer days and nights. This refreshing salad mixes hydrating watermelon and cucumber with the digestive benefits of basil and mint. Feta cheese adds some calcium and protein while red onion pops with antioxidants. Lime juice and olive oil enhance nutrient absorption and offer anti-inflammatory properties.

Salad Ingredients:

  • ½ medium watermelon peeled and cut into 1-inch cubes (5-6 cups)
  • 1 English cucumber, cubed
  • ½ cup mint leaves, chopped
  • ½ cup fresh basil leaves, chopped
  • ½ cup feta cheese, crumbled
  • ½ cup red onion, thinly sliced
  • ½ cup sunflower seeds

Dressing Ingredients:

  • 2 tbsp extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp raw honey
  • Zest and juice of 1 lime
  • ½ tsp salt
  • 1/8 tsp freshly cracked black pepper

Instructions:

  1. Make the dressing by either whisking the dressing ingredients altogether or by adding everything to a blender and blend until smooth.
  2. Assemble the salad ingredients in a large serving bowl. Top with dressing, mix well and enjoy!
