Fiesta Salad

This salad is packed with vitamins, minerals and antioxidants!
Ingredients
1 cup of corn, fresh or frozen
1 can of black beans, drained and rinsed
1 cup chopped tomatoes
1 cup chopped red and green bell peppers
1/2 cup chopped cucumber
1/2 cup shredded zucchini
1/2 cup minced red onion
1/2 cup sliced olives
2 tablespoons chopped cilantro
Juice of 1 lime or 1/2 of lemon
1 medium avocado, chopped
Directions
Mix all ingredients except for avocado. Gently fold in avocado. Drizzle with olive oil or grapeseed oil if desired.
Suggestions
- Add in diced chicken, shrimp or tofu
- Add shredded cheese
- Add seasonings such as hot peppers or cumin
