Baked Rosemary Purple Potato Chips

Ingredients
- 5 small purple/blue potatoes
- 2 tablespoons light colored oil
- ½ tsp salt
- 1-1 ½ tablespoons fresh rosemary, finely chopped
Instructions
- Preheat oven to 425 F.
- Wash and scrub potatoes well.
- Use a sharp knife or a mandolin to thinly slice potatoes into 1/8 inch thick rounds.
- In a bowl, toss the potatoes with oil. Sprinkle salt and rosemary and toss until potato slices are evenly covered.
- Arrange slices in a single layer on a baking sheet(s).
- Bake for 22-25 minutes. Each oven is different, flipping the potato slices half-way through the cooking time may help achieve a more even bake and ensure you get perfectly crunchy potato chips.
- Serve warm or cool with a healthy dip, such as guacamole.
