Carrot and Cashew Soup

Ingredients
- 2 lbs carrots, peeled and roughly chopped
- 4 cups stock, broth or water
- 1 ½ teaspoon salt
- 1 medium potato, scrubbed and roughly chopped
- 3-4 tablespoons butter or olive oil
- 1 cup onion, chopped
- 1-2 cloves garlic, crushed
- 1 teaspoon ginger, grated
- 1 cup cashews, chopped
Method
- Place carrots, liquid, salt and potato into a soup pot and bring to a boil. Cover and simmer it for 12 to 15 minutes. Let it cool to room temperature.
- Saute the onion, garlic and nuts with a pinch of salt in the butter until the onions are clear. Stir in the ginger and cook for another minute.
- Puree everything together in a blender until smooth and reheat until warm. Adjust seasonings.
