Cucumber-Tahini Dressing

Ingredients
- 1 cucumber, sliced in half, seed and chopped
- ¼ cup tahini
- ¼ cup olive oil
- Juice of 1 lemon
- ½ teaspoon salt
- 1 clove minced garlic
- 2 tablespoons minced onion
- 1 teaspoon ground cumin
Method
- Put all ingredients in a blender or food processor.
- Blend until smooth and creamy, stopping occasionally to scrape the sides of the blender or food processor.
- Store in covered container in the refrigerator for up to 3 days. Shake before using.
