Hominy and Beans

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 ¼ cup onions, diced
  • 3 gloves garlic, minced
  • 1 tablespoon dried oregano
  • 2 teaspoons curry powder
  • 1 ¼ teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes
  • 2 tablespoons tomato paste
  • 1 cup canned white or yellow hominy, drained and rinsed
  • 1 cup canned pinto beans, drained and rinsed
  • 1 cup low salt vegetable broth

Instructions

  1. Heat oil in large saucepan over medium heat.
  2. Add onions and sauté for 4 to 5 minutes until onions are soft and translucent.
  3. Stir in garlic and sauté for another minute. Add oregano, curry powder, salt, pepper and red pepper flakes and stir to combine.
  4. Stir in tomato paste, then add hominy, pinto beans and broth and bring to boil.
  5. Reduce heat to simmer for 10 to 15 minutes, stirring frequently until most of liquid is absorbed.
