Kale and Parsley Green Sauce

Serves 4-6

Ingredients

  • 2 small cloves garlic, minced
  • 1/8 cup slivered almonds
  • 1 teaspoon minced fresh red jalapeno pepper, seeds removed (optional)
  • 1/4 teaspoon salt
  • 1/2 cup packed kale leaves
  • 1/2 cup packed parsley leaves
  • 1/8 cup lukewarm water
  • 1 tablespoon red wine vinegar
  • 1/4 cup olive oil, extra virgin

Instructions

  1. Place all ingredients in a small food processor and blend until mostly smooth.
  2. Without a food processor: Whisk the minced garlic, jalapeno pepper, salt, water, red wine vinegar and olive oil until emulsified (mixed together in suspension).
  3. Mince the almonds, kale and parsley leaves with a knife and stir into the sauce until well combined.
