Marinated Pork Tenderloin

Meat

3 lb pork tenderloin

Marinade

  • Macadamia nuts/pecans/almonds (your choice)
  • 2 Tbsp coriander seeds
  • 1/4 teaspoon freshly ground black pepper
  • 1 clove garlic
  • 1 Tbsp brown sugar
  • 1/4 cup olive oil
  • 1/2 small onion

Instructions

  1. Combine the marinade ingredients in a food processor or blender and process until the nuts are chopped.
  2. Place the pork in a zipper lock plastic bag and pour the marinade over.
  3. Refrigerate, turning occasionally, for 2 to 24 hours. Just before cooking, remove the pork from the marinade.
  4. Grill or broil for 20-25 minutes, turning so that all sides are brown and the pork is cooked but not dry. 
  5. Slice into medallions and serve.
