Roasted Asparagus With Prosciutto

Makes 4 servings, 2 to 3 pieces per serving
Prosciutto is a special kind of ham that has been seasoned and salt-cured (but not smoked) and air dried. It is usually sold in paper-thin slices.
Ingredients
- ½ pound asparagus, washed and trimmed (8—12 stalks)
- 1 tablespoon olive oil, or olive oil cooking spray
- Salt or salt substitute and freshly ground pepper
- 3 ounces thinly sliced prosciutto
Instructions
- Preheat oven to 400°.
- Lightly coat a baking pan with the olive oil or spray.
- Cut prosciutto into 1" x 6" strips. Wrap each piece of asparagus with prosciutto in a "candy cane" fashion, from the base of the stalk up to but not including the tip.
- Roast until the asparagus is tender, about 8 - 10 minutes.
- Arrange on a platter and serve at room temperature.
